MISSION STATEMENT:

SCOPE OF POSITION:

The Cook is responsible for food service support of all programs associated with the TSA Spokane Citadel Corps Campuses. Planning and preparing meals consists of Sally's House, Evangeline's House, The Way Out Center, Advisory Board, Corps Programs, and special events.

EDUCATION AND WORK EXPERIENCE:



  • High School diploma or equivalent
  • 12 Months of paid or unpaid experience working with children
  • At least 2 years' experience supervising a commercial kitchen or equivalent


KNOWLEDGE, SKILLS AND ABILITIES REQUIRED:



  • Demonstrate safe handling of knives and kitchen equipment
  • Maintain cleanliness & safety standards for kitchen and food services
  • Possess good leadership, supervision, and communication skills
  • High personal standards of cleanliness and thoroughness
  • Possess a valid Washington State Driver License
  • Blood borne pathogen/HIV training (or willing to accomplish)
  • De-escalation and restraint training (or willing to accomplish)
  • Child Safety Training (or willing to accomplish)
  • Driver's Fleet Safety training (or willing to accomplish)
  • CPR/First Aid training (or willing to accomplish)
  • TB test (or willing to accomplish)
  • Blood borne pathogen/HIV training (or willing to accomplish)
  • Food Handlers permit
  • Minimum of 21 years of age
  • Experienced in efficient ordering of food and supplies needed to prepare meals
  • Ability to work in a fast-paced environment and maintain poise under pressure
  • Able to work as a team player
  • Customer Service mindset; excellent telephone skills
  • Ability and willingness to keep information confidential
  • Microsoft Office proficiency required
  • Knowledge of integrated database applications; use new software programs with basic training
  • Ability to pass a DCYF background check and the Salvation Army Child Safety background check
  • Have the skills and abilities to work successfully with the challenging behaviors of children in care
  • High personal standards of cleanliness and thoroughness
  • Have effective communication and problem-solving skills


ESSENTIAL DUTIES AND RESPONSIBILITES:



  • Design Campus menus in cooperation with Program Managers and Directors
  • Order food and non-food items for the kitchen, as needed
  • Ensure meals and snacks conform to the United States Department of Agriculture (USDA), Child Nutrition Program, and the Summer Food Service Program guidelines
  • Maintain a safe and clean kitchen ensuring that all staff and volunteers follow Health Department and USDA
  • Maintain and submit records, and participate in audits, as required by the USDA
  • Be responsible to adhere to program budgets for expenses
  • Train staff as necessary for the safe operation and use of all equipment and serving policies
  • Report all safety hazards/repairs
  • Plan, prepare, and serve meals and/or snacks for guests as requested:

    • Lunch and Dinner for Sally's and Evangeline's Houses
    • Dinner for youth programs Tuesdays
    • Dinner for CR Thursdays
    • Lunch for Advisory Board - third Wednesday of the month
    • Other events as needed


  • Attend and participate in staff meetings
  • Follow program, safety, and health guidelines
  • Maintain order in the kitchen
  • Prepare food in a safe and timely manner for the next meal
  • Record quantities of food used
  • Other duties as assigned
  • Submit repair requests to Facilities Manager and Director of Operations
  • Maintain good communication and working relationships with other kitchen users
  • Maintain a current 60-day rotating menu system for facility that meets USDA food requirements
  • Setup/maintain an inventory system of all food products
  • Ensure expiration dates are not exceeded and mark foods that should always be used first
  • Order/shop for all food and cleaning supplies from appropriate vendor
  • Maintain food costs within budgetary requirements
  • Provide daily meal counts
  • Provide all documentation for USDA Child Nutrition Program
  • Ensure safety, health, and sanitation standards are maintained per Health Department
  • Provide training/instruction/supervision of all volunteers who use the kitchen
  • Manage, maintain, and clean food storage areas, freezers and refrigeration equipment and log temperature controls twice daily
  • Keep all logs associated with cleaning and food production current
  • Each Friday - prep meals for the upcoming weekend
  • Keep pantry and refrigeration area secured when not in use
  • Stock breakfast carts for the following morning and make sure the refrigerators for both House's are stocked with necessary breakfast items (butter, milk, fruit, etc.)
  • Stock Sally's and Evangeline's Houses refrigerator with condiments and necessary supplies
  • Stock Sally's and Evangeline's Houses snack cupboards ensuring daily menu items are available
  • Plan rotating 60-day menu and prep the needed food items in a sanitary manner


PHYSICAL REQUIREMENTS:



  • Sit, walk, stand, bend, squat, climb, kneel, and twist on an intermittent or continuous basis
  • Grasp, push, pull objects, and reach overhead
  • Operate a computer and telephone
  • Lift up to 25 lbs.
  • Understand verbal and written information
