The Role: Oversee all aspects of culinary operations throughout the property. implements, communicates, and ensures the achievement of operational goals and objectives, marketing strategies, and budgets; ensures compliance with policies and procedures; and monitors forecasts, budgets, costs, and operating results. Responsibilities:
- Responsible for directing the overall operations and staff of the Culinary department. Develops, implements and manages operational goals and monitors achievements of performance and profit objectives.
- Interview, select and train employees and ensure scheduling is done in an effective and efficient manner, while maintaining labor costs, meeting staffing objectives and achieving guest satisfaction.
- Responsible for preparing, monitoring and adhering to budgets and ensuring compliance to departmental budget initiatives. Reports budget concerns / deviations to the Executive Management / GM.
- Responsible for the development and implementation of menus for all food outlets.
- Maintains consistent food quality in all F&B outlets
- Implements and maintains standard methods of preparation and cooking and checks the sizes for portioning standards. Inspects the garnishing of all foods. Ensures that all food preparation correct
- Responsible for maintaining cost control methods and procedures by monitoring consistent pars and inventory.
- Responsible for maintaining established quality assurance procedures to ensure acceptable health department and customer service standards.
- Requisition food and equipment from respective purchasing agents, giving specifications, quantities, and quality prescriptions, which must be maintained by the Purchasing Department
- Initiate, promote and enforce safety procedures; primarily, cooking and holding processes of hot and cold foods
- Safety handling of all equipment within the "Back of the House" (mixers, dicers, vegetable cutters, etc.)
- Observe and enforce sanitary behavior and clean appearance of food preparation
- Ensure a safe working environment and attitude on the part of all employees in areas of responsibility
- Enthusiastically supports, actively promotes, and demonstrates superior customer service in accordance with department and company standards and programs.
- Ensures customer service standards are followed by all team members and addresses issues as they arise. Responsible for the overall achievement of department customer service goals.
- Responsible for staying current of knowledge and enforcement of all gaming laws and regulations which apply to the functions and duties of the Food & Beverage Department for which this position is responsible
- Maintains strict confidentiality in all departmental and company matters
Qualifications:
- Minimum 4 years experience in the Culinary field, minimum 2 years in a leadership role
- Excellent verbal and written communication skills
- Proficient in Microsoft Office Produces (Word, Excel, Outlook, Teams)
- Working knowledge of safety/health department regulations
- Ability to obtain necessary food handling / health department work cards as defined by local jurisdiction.
- ServSafe Certification (preferred)
- Ability to work flexible schedules, to include nights, weekends and holidays
